AK Summer Salad

AK Summer Salad was dreamed up when I wanted to eat something cold & easy for dinner!  

Ingredients:

  • 1 can black beans, drained & rinsed
  • 1 can corn, drained
  • 1 large garden tomato 
  • 1 bell pepper, any color
  • 1 red onion
  • 6 green onion 
  • 3 TBSP Olive Oil 
  • 3 tsp. Midtown Bake Shop Ranch Seasoning
  • 4 Avacados 
  • Limes

 

Instructions:

Let’s get cooking: 

  1. Drain and rinse black beans 
  2. Drain corn 
  3. Chop all the veggies - tomato, bell pepper, red onion, green onions

Assembly: 

  1. In a large mixing bowl add black beans, corn, tomatoes. bell pepper, red onion, green onions
  2. In a small bowl mix the olive oil and ranch seasoning mix 
  3. Add the olive oil & seasoning mixture to the large bowl of veggies and stir to combine
  4. Chill salad for several hours before serving, best if it is chilled for 6 plus hours.  
  5. When ready to serve, cut up the avacados. Use 1/2 avacado per serving.  
  6. Dip up summer salad. top with avocado and squeeze 1/2 lime on top  

This is a perfect salad for a small dinner or a side dish for grilled chicken, fish, steak, or hamburgers.  

It also makes the perfect lil' snack after spending the day outside!
