AK Summer Salad was dreamed up when I wanted to eat something cold & easy for dinner!
Ingredients:
- 1 can black beans, drained & rinsed
- 1 can corn, drained
- 1 large garden tomato
- 1 bell pepper, any color
- 1 red onion
- 6 green onion
- 3 TBSP Olive Oil
- 3 tsp. Midtown Bake Shop Ranch Seasoning
- 4 Avacados
- Limes
Instructions:
Let’s get cooking:
- Drain and rinse black beans
- Drain corn
- Chop all the veggies - tomato, bell pepper, red onion, green onions
Assembly:
- In a large mixing bowl add black beans, corn, tomatoes. bell pepper, red onion, green onions
- In a small bowl mix the olive oil and ranch seasoning mix
- Add the olive oil & seasoning mixture to the large bowl of veggies and stir to combine
- Chill salad for several hours before serving, best if it is chilled for 6 plus hours.
- When ready to serve, cut up the avacados. Use 1/2 avacado per serving.
- Dip up summer salad. top with avocado and squeeze 1/2 lime on top
This is a perfect salad for a small dinner or a side dish for grilled chicken, fish, steak, or hamburgers.
It also makes the perfect lil' snack after spending the day outside!
